If there was one (*healthy*) food I could probably eat every day for the rest of my life, it’d be salad. There are so many combination possibilities from sweet to savory. This one hits all those notes and with a couple of strips of grilled chicken, it’s a full and satisfying meal.
Ingredients:

Salad
6 cups lettuce (romaine, iceberg, spinach…whatever you like)
1 cup  dried cranberries
1/2 cup slivered almonds, toasted
1 cup grated parmesan cheese
1 gala apple chopped
3 slices bacon cooked and crumbled
Maple Dijon Vinaigrette
6 Tablespoons olive oil
3 Tablespoon apple cider vinegar
3 Tablespoon maple syrup (or to taste)
4 teaspoon mustard
Salt & pepper to taste
In a large bowl, assemble the salad in order of ingredients. In a small bowl, whisk together the vinaigrette. When ready to serve, drizzle the vinaigrette over the salad and toss to combine.
