Whole Wheat Applesauce Cake (with Cream Cheese Frosting!)

This healthy “cake” is probably a diet-ruiner with the cream cheese frosting.  Oh, well.  It’s not the same without it.

Whole Wheat Applesauce Cake with Cream Cheese Frosting

Ingredients:
Cake
1 cup sugar
1 stick butter, softened
1 egg
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon salt
1/2 teaspoon baking soda
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup applesauce


Preheat the oven to 350F.  Cream together the first four ingredients.  In a separate bowl, sift together the remaining ingredients except the applesauce.  Combine with the butter mixture and slowly add in the applesauce.  Pour into a greased loaf pan and bake for about an hour.  Rest ten minutes in the pan before removing.  Frost once completely cooled.


Frosting
1/2 stick butter, softened
4 ounces cream cheese, softened
1 1/2 cups powdered sugar
1/2 teaspoon cinnamon

Cream together and spread over the cake once it’s cooled.
