Here’s a (healthy!) twist on an old favorite.
Add a few chocolate chips for an extra special treat!
Banana Bran Pancakes


1 cup milk
1/2 cup wheat bran
1 teaspoon ground flax (optional)
1 egg
2 Tablespoons oil (or applesauce)
1 cup wheat flour
1 Tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 to 2 ripe bananas, smashed

Mix all ingredients except banana until well combined (there’ll still be some lumps).  Fold in the bananas.  Cook on a skillet on medium heat until bubbles begin forming (about a minute).  Flip and cook for an additional 30 seconds/minute until golden brown.  Serve hot with syrup, jam, butter, honey, whipped topping, chocolate chips, etc.
