When we’re getting ready to go on an extended vacation, I refuse to buy groceries until the food we have in the food is as used up as possible to avoid anything spoiling while we’re gone (what can I say? I hate wasting). This recipe was great because it’s healthy, a snap to assemble, and I had all the ingredients on hand. Bonus that everyone ate it…including the broccoli haters in the house. 😉 Serve for breakfast or the main course at dinner and garnish with sour cream and green onions, if desired. Because sour cream and onions make just about everything better.

Ingredients:

4 to 6 cups frozen broccoli florets (if using fresh broccoli, blanch for 2 mins)
1 to 2 cups diced ham
1 cup grated mozzarella
1/3 cup thinly sliced green onion
8 to 10 eggs, well-beaten
Black pepper to taste
Sour cream for serving, optional


Preheat oven to 375F. Spray a 9×12 pan with non-stick spray. Layer broccoli, ham, cheese, and green onions in the pan. Mix the eggs and pepper together and pour beaten egg over the pan. Carefully turn the veggies and ham over so everything is coated with egg. Bake 35 to 45 mins (more eggs will require longer cooking time, but I started checking at about 30 mins). When eggs are set, serve hot, with cream cheese and green onions as garnish.
