No cream and less cheese don’t prevent these scalloped potatoes from being a flavorful side dish!
Low Calorie Scalloped Potatoes
Ingredients:
About 2 pounds potatoes
2 Tablespoons butter
Salt and pepper to taste
3 ounces shredded cheese
1 teaspoon garlic powder
1 teaspoon thyme
3 bay leaves
1 cup skim milk

Peel and wash potatoes.  Slice into thin pieces (I hand sliced mine–I like them a little thicker).  Melt butter and mix in salt and pepper.  Add potatoes and toss to coat.  Spritz a 13×9 pan with cooking spray and spread out potatoes.  Top with shredded cheese.  In a saucepan, bring milk, garlic, thyme and bay leaves to a boil.  Remove from heat and discard bay leaves.  Pour milk over the top of the potatoes.  Bake for 40 to 50 minutes or until tender (you can cover with aluminum foil if the cheese is scorching).
