So colorful!

This is a great way to sneak in more bean varieties into your diet.  It takes a bit of preparation but as far as baked beans go, it’s quick.  Perfect for a side to grilled meats and veggies.

Ingredients:


5 strips bacon
1 onion
1 cup brown sugar
1/3 and 1 Tablespoon vinegar
1 teaspoon garlic salt
1 can (15 oz) Great Northern beans
1 can (15 oz) kidney beans
1 can (15 oz) Lima beans
1 can (15 oz) pork and beans


Slice the bacon and onion into small pieces and fry until bacon is crispy and onion is soft.  Drain fat.  Add garlic salt, sugar and vinegar.  Simmer 20 minutes.  Drain and rinse beans.  Add to the sauce and toss to coat.  Bake in 9×9 pan lined with aluminum foil for 45 minutes at 350F, stirring occasionally.
