We made Jack some fruit pizza for his Father’s Day breakfast.  Pizza for breakfast was (needless to say) a hit.  It was so artistic it was almost too beautiful to eat.  Almost.


Ingredients:
1 pizza crust, brushed with milk and sprinkled with sugar (this is the recipe I used)
4 oz cream cheese
1/2 cup cottage cheese
1/4 cup powdered sugar
1 teaspoon lemon juice
1 teaspoon vanilla
Assorted fruit, sliced

Prepare pizza crust and bake 15 to 20 minutes or until golden brown.  Whip cream cheese until fluffy then blend in processor with cottage cheese, sugar, lemon juice and vanilla.  Smooth over baked dough and top with fruit.  Sprinkle with powdered sugar if desired.  Cool slightly before slicing.
