My husband is not a fan of raisins so he created this fast, healthy, raisin-free carrot salad that’s great as a side in summer because it requires no cooking.

Ingredients:

2 cups shredded carrots
2 Tablespoons lime juice
2 Tablespoons mayonnaise
1 Tablespoon honey
Salt and pepper to taste

Stir ingredients until blended.  Serve immediately.

Enjoy!

  1. I was always amazed at the really good food Jack was able to make. It always seemed to taste good even if it didn't smell or look good. Not that this doesn't look good because it looks really good.

  2. Haha, yeah, he's gotten a lot better at his presentation of food. I do like it when he cooks, except when I have to clean up the kitchen afterwards. He doesn't put anything away while cooking and he spills a lot so it looks like a bomb exploded. I guess that's the tradeoff for not having to cook!

  3. That looks great and even better is the Pig in a Blanket in the background. My kids love those!!! Wait…is that what you call them? The hot dog in the croissant…lol!
