
I love an easy veggie side dish, and I’ve long thought cabbage is an underrated accompaniment to dinner. Usually, I just slice some cabbage, throw it in with a little water, oil, salt, and pepper, but I was feeling fancy for Sunday dinner and decided to try something else. Some Googling led me to this gem and yum (it’s a keeper)!
Ingredients:
- 2 Tablespoons butter
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 Tablespoons mustard
- 1/4 teaspoon paprika
- 1/2 head cabbage, sliced and chopped
- Salt and pepper, to taste
Heat a large skillet on medium heat and melt the butter. Add the onion and cook until translucent. Add the mustard, paprika, salt, and pepper. Add in the cabbage, and stir to combine. Cover and steam on medium-low heat, about ten to fifteen minutes, or until the cabbage is tender. If the cabbage isn’t softening with its own juices, add a few tablespoons of water to steam, and cook until evaporated. Serve hot.
