Like every Thanksgiving, we were lucky enough to have some leftover turkey, which we enjoy. But, once the sides are gone, I have to find other ways to eat the meat. This recipe is great because it’s quick, everyone enjoyed it and is loaded with veggies!

Ingredients:


1 small onion, chopped
2 Tablespoons butter
2 Tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups milk
2 cups diced or shredded cooked turkey
1 cup frozen veggies
2 cups hot mashed potatoes


In a large saucepan, saute the onion in the butter until tender. Stir in the flour, salt, and pepper. Then add the milk and stir until smooth. Bring to a boil, stirring frequently and boil for two minutes or until thick and bubbly. Reduce the heat and add the turkey and veggies. Cover and simmer until heated through. Serve over mashed potatoes.
