Crazy Cake (No Eggs, Milk or Butter!)

I’m not intentionally foregoing eggs in our baking (greek yogurt brownies anyone?) but we’ve come across a few non-traditional recipes that are still quite delicious.  This “crazy cake” was popular during the depression because it doesn’t have eggs, milk or butter–ingredients that were hard to come by.  Surprisingly, it’s still moist and delicious!

Crazy Cake

Ingredients:


1 1/2 cups flour
3 Tablespoons cocoa
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon white vinegar
1 teaspoon vanilla
5 Tablespoons oil
1 cup water


Preheat oven to 350F.  Mix first 5 dry ingredients in a greased 9×9 baking pan.  Make three depressions in the dry ingredients (2 small, 1 large).  Pour vinegar in one hole, vanilla in the other and the oil in the largest.  Pour water over all of it and mix well until smooth.  Bake for about 35 minutes.  Toothpick should come out clean.  Cool and top with frosting, powdered sugar, fruit, etc.
