I love cinnamon rolls but am not always in the mood to devote the time required for them.  Here’s a great solutions–quick bread that tastes like cinnamon rolls!  Great as a side to a main dish, as part of a special breakfast or light dessert.

Cinnamon Roll Quick Bread

Ingredients:
Bread
2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1 egg
1 cup milk
2 teaspoons vanilla
1/2 cup plain greek yogurt or sour cream

Swirl Topping
1/3 cup sugar
2 teaspoons cinnamon
2 Tablespoons water

Glaze
1/2 cup powdered sugar
1 Tablespoon milk

Preheat oven to 350F and spritz a bread pan with cooking spray.  In a large bowl, combine flour, baking powder, salt and sugar.  In a separate bowl, combine egg, milk, vanilla and yogurt/sour cream.  Mix wet and dry ingredients together.  Pour into greased bread pan.  Mix the swirl ingredients together and pour over the bread batter.  Cut into batter with a knife to make swirls.  Bake 45 to 50 minutes or until a toothpick comes out clean.  Cool on a rack for 15 minutes.  Mix together glaze ingredients.  Carefully remove bread from the pan and top with glaze (the glaze will stick better if it’s cooled completely, but hey, the bread’s way tastier when it’s warm).
