Here’s a great way to get some crunch on your chicken drumsticks without the extra calories from frying them.


3/4 cup Bisquik
3 Tablespoons (1 pkg) dry Ranch mix
1 teaspoon paprika
Salt and pepper to taste
1 egg
About 12 drumsticks

Preheat oven to 400F.  Sift together the Bisquik, Ranch, paprika, salt and pepper.  In a separate bowl, slightly beat the egg with a tablespoon of water.  Dip each leg in the egg then the Bisquik mixture, coating evenly.  Place in a single layer in a 13×9 inch pan that’s been spritzed with cooking spray (if you’ve got a rack to allow the drumsticks to cook above the drippings, they’ll be even crispier–just spritz the rack with cooking spray to make non-stick).  Bake for 35 minutes then flip and bake another 15 to 20 minutes or until golden and crispy.
