I love a good dinner roll but I don’t always have time or forethought to prepare bread that takes half the day to knead, rise and bake. These rolls are a great compromise–they’re light and fluffy and ready in thirty minutes.
Ingredients:
1/4 cup sugar
1 cup warm water
4 1/2 teaspoons yeast
1/3 cup vegetable oil
1 teaspoon salt
2 eggs
4 to 5 cups flour

Preheat oven to 400F. Combine sugar, water and yeast. Allow to dissolve and froth for 10 minutes. Add oil and salt. Add slightly beaten eggs. Slowly add flour and knead about two minutes. Shape into rolls and place in a greased baking pan. Let rise in a warm place for 10 minutes. Bake for 10 to 12 minutes until golden brown.

Yummy! I will have to try this sometime. We love freshly baked rolls so much and these seem so quick and easy!
How many does this make? A dozen good size? They look awesome!
Good question! It made 9 good sized rolls. Of course, you could make them a tad smaller and end up with a dozen. Enjoy!
