I thoroughly enjoy this chicken dish because not only is it very fast to prepare, it can all be done in the same skillet.  After the chicken is cooked, it’s set aside for the glaze and then returned to the pan for the final coating.  Be prepared for a delicious meal in no time!

Ingredients:

3 to 4 chicken breasts
1/4 cup chopped onion
1/4 cup chopped green onion
1 teaspoon minced garlic
1 1/2 teaspoon rosemary
1/4 cup honey
1 Tablespoon Dijon mustard
3 Tablespoons lemon juice

In a large skillet, cook the chicken in olive oil, about three to six minutes per side, depending on the thickness.  When the chicken is cooked through, set aside to prepare the glaze.

In the same skillet, saute the chopped onions and rosemary.  Add in the honey, mustard and lemon juice, stirring to combine.  Return the chicken to the skillet and coat thoroughly with the glaze.
