Here’s a (relatively) quick crock pot recipe that is hearty but not too heavy for a warm summer day. You’ve probably got all of the ingredients already for a delicious dinner!

About 3 boneless, skinless chicken breasts
1 cup mayonnaise
1/2 cup grated Parmesan cheese
2 teaspoons dried parsley
1 teaspoon garlic powder
1/2 teaspoon pepper
2 Tablespoons lemon juice
1 Tablespoon white vinegar
2 Tablespoons Dijon mustard
2 Tablespoons honey
Place chicken in crock pot on high for four hours or until cooked and tender. Remove, shred and dump excess water. Return chicken to the crock pot.
In a medium bowl, thoroughly mix remaining ingredients.
Pour over chicken and mix. Cover and leave on high for another hour. Serve over a bun and lettuce.
