With the approach of summer, hot weather is on the way.  If you can’t escape to the pool to cool off, this recipe for Lemon Ice will sure help.

Ingredients:

4 large lemons
2 cups water
2/3 cup sugar
2/3 to 3/4 cup (depending on how “lemony” you’d like it) lemon juice squeezed from the lemons
3 teaspoons lemon zest

In a saucepan, bring the water and the sugar to a boil and allow to boil for about five minutes, stirring occasionally.

Meanwhile, cut the tops off the lemons, squeeze the juice and save for later.  Strain out seeds if necessary.  Grate the peels for the zest.

When the sugar water is finished, combine it with the lemon juice and zest.  Pour the lemon ice mixture into a covered glass container and put in the freezer.  Stir after the first hour, then every few hours afterwards until it reaches the desired consistency.

Recipe adapted from The Farm Girl.  If desired, present lemon ice in original lemons by carefully squeezing juice from lemons and slicing a very thin segment off the bottom to help it stand.  Buy an extra lemon for the zest.  Store the lemon shells in the refrigerator until ready to serve lemon ice.
