Yesterday was one of those days. I caught Evelyn playing with my sewing scissors and when I told her to put them down, she panicked and snipped my measuring tape in half. Claire had a sore red bum and the apartment maintenance man showed up unannounced to do some inconsequential repairs right as the girls were laying down for naps. There were multiple meltdowns over nothing in particular, including a few of my own. By the end of the day, chocolaty white chocolate chip cookies seemed like a really good idea.
Ingredients:
1/2 cup unsalted butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
1 teaspoons vanilla extract
1 large egg
1/3 cup unsweetened cocoa
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 bag white chocolate chips
Preheat the oven to 350F. Cream the butter and sugars until fluffy. Add the vanilla and eggs, mixing well. Dump in the cocoa and mix.
Sift the flour, baking soda and salt before adding to the chocolate mixture. Fold in the white chocolate chips.
Drop by tablespoonfuls onto a lightly greased cookie sheet, flattening slightly. Bake for 8 to 10 minutes. Cool slightly on the pan, then move to a wire rack or paper grocery sack to cook completely.
