I was short on time for dinner, and had no idea what to make–nothing sounded good. After a little research on my part, I discovered this recipe. Not only was it simple (five ingredients!), and QUICK (ready in less than 30 mins), EVERYBODY loved it. There were a few initial skeptics, but once they tried it, they were converted.
Ingredients:

4 chicken breasts
4 garlic cloves, minced
4 Tablespoons of brown sugar
3 teaspoons olive oil
Salt and pepper to taste
Preheat the oven to 500F. Spray a casserole dish with cooking spray. Set aside. Saute minced garlic in the olive oil until translucent but not browned. Set aside. Place the chicken breasts in the casserole dish and sprinkle with salt and pepper on both sides. Mix brown sugar into the sauteed garlic, and distribute evenly on top of the chicken. Bake, uncovered, for 15 to 20 minutes or until chicken is cooked through. Serve hot over rice.
