I have a goal of making a new meal we’ve never had before at least once a month in 2019. For January, I decided to try slow cooker cilantro lime chicken and it was a hit! Not only was it SUPER simple (I put it in the crockpot in less than five minutes–even with frozen chicken) at lunchtime, and it was ready by dinner. It can be served over rice, as a burrito, on top of nachos, and fully dressed, it’s a whole meal all in one. Kind of reminds me of our sweet pork and cilantro salad, except this version is tangier than it is sweet. Still delicious though!

Fully dressed or plain as-is, it’s absolutely delicious!

Ingredients:


3 boneless, skinless chicken breast (mine were frozen and were still done on time)
1 can (15 oz) tomato sauce
1 bunch cilantro OR 2 Tablespoons dried
1 lime OR  1/4 cup bottled lime juice
1 Tablespoon chili powder
1 Tablespoon cumin
1 Tablespoon garlic powder
Salt and pepper to taste
1 can corn, drained
1 can black beans, drained and rinsed.


Lightly oil crock pot. Put in chicken. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper. Squeeze lime over the chicken, then top all of it with tomato sauce. Cook on low 6 to 8 hours or on high 3 to 4. Shred chicken. In the final twenty minutes, dump in corn and beans to heat through. Serve hot.b-9748844
