I’ve been watching the apples fill out on the trees and know in a few months, we’ll have a bumper crop of fruit on our hands. So, I’ve thought about how I’ll use up all our bounty: juice, applesauce, apple pie filling and now, fresh apple and cinnamon muffins.

Ingredients:


2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 cups diced apples (peeled and cored)
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
2 teaspoons vanilla
1/2 cup milk


Topping
4 Tablespoons butter
Cinnamon sugar


Preheat oven to 375F. Line muffin pan with paper muffin cups and spray with cooking spray. Sift together flour, powder, salt and cinnamon.  Use two tablespoons of flour mixture and toss over apples. Set flour and apples aside.  Cream together butter and sugar. Add in eggs and vanilla.  Slowly add in milk and flour mixture until smooth. Fold in diced apples.  Fill muffin cups and bake for 20 to 25 minutes or until toothpick comes out clean. Cool slightly in pan, then remove, dip in melted butter and sprinkle cinnamon sugar over the top.
