I remember the first time my grandma gave me vanilla wafers (it must have been a pivotal life moment).  We get them on occasion at the store but they never last long.  I’m sure now that we can make them at home, they STILL won’t last long, but at least we can make them when we like.

If you ever dislike your countertops, feel free to look at my mustard yellow ones and feel better. 🙂

Ingredients:


1 stick butter, softened to room temperature
1/4 cup sugar
Pinch of salt
1 egg yolk
1/2 Tablespoon vanilla
1 cup flour


Cream together the butter, sugar and salt.  Add in the yolk and vanilla and them slowly mix in the flour until it forms a sticky dough.  Shape into a roll about 1 1/2 inches thick.  Wrap in plastic and refrigerate about two hours or until firm.  Cut into 1/4 inch thick cookies.  Bake at 350F for 12 to 15 minutes or until edges are slightly browned.  Cool a few minutes on the baking sheet before transferring to a wire wrack to cool.
