Here’s an old recipe my sister made that was tempting enough to cause me to break a temporary dessert fast.  It was worth every bite.

Ingredients:

4 cups peeled, sliced apples
2 cups sugar
2 cups flour
1 1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 eggs
3/4 cup vegetable oil
 2 teaspoons vanilla
1 cup chopped pecans (optional)


Preheat oven to 350F.  In a large bowl, mix together apples and sugar.  Add dry ingredients until well-blended.  In a separate bowl, beat together eggs, oil and vanilla.  Add to the apple mixture, stirring until thoroughly moistened.  Stir in pecans if using.  Pour into a greased 13×9 inch baking pan and bake about 50 minutes, or until cake springs back when pressed.


Butter Sauce Topping:


1/2 cup butter
1 cup sugar
1/2 cup heavy whipping cream or evaporated milk
1 teaspoon vanilla


Place all ingredients in a large saucepan, stirring constantly until brought to a boil over medium-high heat.  Cook 3 minutes.  Serve warm over cake with a scoop of vanilla ice cream, if desired.
