Brown Sugar and Balsamic Glazed Pork Loin

This crock pot recipe makes for a tender, sweet and slightly tangy pork loin.  It can be started fresh in the morning or can be prepped ahead of time and frozen so you can pull it out, toss it in the slow cooker and still have a delicious homemade meal for dinner.

Ingredients:

1 boneless pork loin (about 2 pounds)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic, minced or crushed

Glaze:

1/2 cup brown sugar
1 Tablespoon cornstarch
1/2 cup water
1/4 cup balsamic vinegar
2 Tablespoons soy sauce

Combine sage, salt, pepper and garlic.  Rub over pork loin.  Place in slow cooker with 1/2 cup of water.  Cook on low for 6 to8 hours.  About one hour before the pork loin is done, combine glaze ingredients in a small saucepan.  Heat over medium-low heat until sauce thickens.  Brush glaze over loin 2 or 3 times during last hour.  Serve with remaining glaze on the side.
