With the right ingredients, heated to the right temperature and mixed until a light, sticky cream, homemade marshmallow fluff isn’t too difficult to make!  Plus it’s much more cost effective than the store bought variety.  It’s delicious over some chocolate ice cream, in an oatmeal cookie sandwich, in a fudge recipe or by the spoonful following a hard day.

2 egg whites
Pinch of salt

When the sugar mixture reaches 246F, slowly pour it into the egg mixture and beat about seven minutes until it becomes light, fluffy and sticky.  Mix in 1 teaspoon vanilla.
